Invite your friends over for a Mexican fiesta and treat them to this delicious dish!
8 Hours in slow cooker
6 Chicken Breast cut into quarters
½ cauliflower head chopped
1 knob garlic – minced
1 onion diced
2 capsicums any color, sliced
½ tsp vegetable stock mixed with ½ cup water
1 tsp smoked paprika
1/4 tsp chilli flakes
1 chopped Chilli
1 tsp hot or mild paprika
1 tsp cumin
1 tsp oregano
4-5 medium tomatoes diced or 1 Can Tomatoes
Bunch of coriander
Place everything into a slow cooked and cook for 8 hours on low, or until the chicken is falling apart and is nice and thick.
Garnish with coriander, lime and chilli flakes
This is a great recipe to Meal Prep, freezes well and will make 6 – 8 serves. Fantastic to warm you up on a winters day.
