Eggs are the perfect way to get your daily dose of protein and are a great source of Vitamin D. Try this delicious dish which can be eaten for breakfast or lunch.
-8 large whole eggs
-1/4 cup unsweetened almond milk
-1/8 to 1/4 teaspoon dill
-1/8 to 1/4 teaspoon pink salt
-1/8 to 1/4 teaspoon pepper
-spray of cooking spray
-1/2 cup chopped green pepper
-1/4 cup chopped onion
-1/2 cup chopped fresh tomato.
1. In a bowl, whisk the first five ingredients until blended.
2. In a 12-inch nonstick Pan, spray with cooking spray. Add green pepper and onion; cook and stir until tender. Remove from pan.
3. In same pan, pour in egg mixture; cook and stir over medium heat until eggs begin to thicken.
4. Add tomato and pepper mixture; cook until heated through and no liquid egg remains, stirring gently.
