Do you remember when you were a kid and would see Popeye The Sailor Man pull out a can of spinach, watch his muscles grow twice its size and then all of a sudden he has the capability to lift up an entire house? Well, your favourite childhood character didn’t get it wrong! This leafy vegetable is not only packed with antioxidants, minerals and vitamins, it has also been known to increase muscle efficiency!

That doesn’t mean you will be able to lift up an entire house after eating it (sorry) but, we do have the perfect recipe that combines this beneficial green with your favourite protein to give you a delicious lunch or dinner meal.

INGREDIENTS:

-Lean Mince beef, chicken or turkey – whatever your flavour or taste

-½ cup of shredded raw spinach

-¼ cup of diced red or brown onion

-2 garlic cloves to taste, finely chopped

-1 tsp of cumin to taste

-Salt & pepper to taste

 

METHOD:

1. Mix together your choice of meat, chopped raw spinach, red onion, garlic, and spices. Mix thoroughly using your hands until the spinach is completely mixed into the meat.

2. Form two or three meatballs of roughly the same size using your hands.

3. Line a baking tray with baking paper and place meatballs on tray. Bake in a 200C oven for 10-12 minutes

4. Serve
