What don’t we love about Poke Bowls? They’re fresh, super quick to make, tastes great and you can get creative and add in whatever ingredients you want!
We chose our fave protein and veggies, threw it all in a bowl and voila!
1 fillet sushi-grade salmon (or swap this out for another source of protein)
1 cups cooked brown rice
1/2 avocado, sliced
1 carrot, grated
Handful of mushroom cups, sliced
1 zucchini, sliced
5 cherry tomatoes
2 sweet potatoes, cut into cubes
1. Preheat oven to 180 degrees, placed diced sweet potato on a lined baking tray and season with salt, pepper and olive oil. Place in oven and cook until soft
2. Cut sushi-grade salmon into cubes and place to the side
3. Once brown rice is ready and sweet potato is cooked, serve brown rice in a bowl and top with grated carrot, sliced mushrooms, avocado, zucchini, cherry tomatoes, sweet potato and salmon pieces
4. Season lemon for taste
